Bookish Baking: Pink Cherry Chocolate Truffles (Kirby)

This recipe was written for the Kirby Shaped Like A Friend Zine.

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp cocoa powder
  • 1/4 cup whipping cream
  • 1 cup dried cherries
  • 1/2 tsp salt
  • 1/2 dried coconut shavings 
  • 2 cups almonds
  • 1/2 tsp cherry (or other fruit) juice (optional) 

Directions:

  • Pulse almonds in a food processor until finely chopped. Add 2 tbsp cocoa powder and ½ tsp salt, pulse to combine. 
  • Add chopped dried cherries, and pulse until the dough starts to form. If too dry, add ½ tsp of cherry juice until a sticky dough forms. 
  • Form truffles of desired size, about 1 tbsp filling each, into balls. 
  • Heat heavy whipping cream over low heat, and add semi-sweet chocolates. Let it melt. 
  • Dip truffles into chocolate mixture, then roll in dried coconut shaving. When dry, roll again in chocolate mixture, and then toss with cocoa powder. Let it harden before eating.
